A delicious yet simple dessert. I found this recipe in a Williams-Sonoma cookbook that I have, but you can find it online here. I didn’t decide to make this last night until right before dinner so to save time I used puff pastry for the crust. The whole thing took under an hour to make and the end result was delicious!!

It’s hard to believe that this is the last week of my Masters! Four days, six finals and one paper are all that’s left! I hope everyone has a wonderful week! More exciting posts will resume next week once this is all over and I officially have my MS! :):) And now time to continue studying so that I pass all those finals!
I believe that cake is appropriate at any time of day! When I came across this recipe for a breakfast cake, I knew I had to make it right away. The combination of almonds and raspberries makes it seem almost “healthy.” The recipe is put together for a 6” cake which couldn’t be more convenient when baking for two people. I baked it Friday night in hopes of having it with our weekend breakfasts, however it didn’t quite make it to breakfast. ;)
